Care Instructions
To preserve both the beauty and structure of your cutting board some simple steps should be taken. The cleaning instructions should be followed whenever the block is used and the maintenance process should take place monthly.
Cleaning:
Clear board of crumbs and scraps; scrub surface with damp, soapy sponge; remove soap with a wet towel; dry board immediately; never soak the board or clean it in a dishwasher!
Maintenance:
Coat block with thin layer of oil and allow 30 minutes to soak; if the oil has disappeared after 30 minutes, then apply another coat of oil; repeat this process until a small amount of oil remains on the surface of the block following the 30-minute waiting period; remove excess oil with a paper towel; flip board and repeat on bottom side.
Cutting board maintenance oil:
Jacob May recommends using a butcher-block oil comprised of a mixture of mineral oil and natural waxes including beeswax and carnauba wax. Many suitable products are available at your local kitchen supply store or online. This one works great.
